Caramel Apple Pancakes
My kids love pancakes on weekend mornings and they went crazy for these Caramel Apple Pancakes! I have a little secret to share- these pancakes are only semi-homemade. I love using a whole-grain store-bought mix to save time but feel free to use whatever pancake batter you like.
Healthy Caramel Apple Pancakes
You can make these pancakes to enjoy during the week as well. Just wait to drizzle on the caramel sauce until you are ready to eat them. Or just make them apple cinnamon pancakes and top with syrup or peanut butter like I do. They reheat in the microwave really easily and everyone will be happy with a weekend-type breakfast on the weekdays.
Whole-Wheat Caramel Apple Pancakes
For the caramel apple topping, I sautéed EverCrisp apples (a mix between Fuji and Honeycrisp) from Michigan in a little butter. That combination of the butter and apples is so delicious. Then, add in the caramel sauce and it is one of the best pancake toppings you can imagine.
I love cooking with Michigan apples because they are always so fresh and I love supporting my own state. Michigan has the best climate for growing apples- a cool fall which helps to produce crispy sweet apples.

Caramel Apple Pancakes

Caramel Apple Pancakes make the best indulgent (but still healthy) breakfast! Apple pancakes topped with sweet apples sautéed in butter and drizzled in caramel sauce.
Prep Time:  5 minutes Cook time: 10 minutes Total time: 15 mins

INGREDIENTS

  • 2 cups water
  • 3/4 cup finely chopped EverCrisp apples
  • 1 teaspoon cinnamon
  • Caramel Apple Toppings
  • 1 tablespoon butter
  • 1 1/2 cups sliced EverCrisp apples
  • 1/4 cup caramel sauce

INSTRUCTIONS

  1. Mix together pancake mix, water, apples and cinnamon until batter is smooth in a glass mixing bowl. 
  2. Heat a griddle or nonstick pan and spray with nonstick spray.
  3. Spoon 1/4 cup batter onto pan at a time and lightly flatten with spoon or measuring cup if batter is super fluffy so that pancakes cook evenly.
  4. Cook on one side until bubbles form on uncooked side and then flip and cook until pancake is cooked through.
  5. Meanwhile, in a medium skillet, melt butter over medium heat. Sauté sliced apples until they are cooked through.
  6. Top cooked pancakes with apples and a heavy drizzle of caramel sauce.
