Ha! I wish I was kidding.
It starts to get cold around September and doesn’t warm up until around May. So, while everyone else is breaking out the grills, we are still enjoying our soups pots and slow cookers.
So, here in the good ole B-lo, there are some foods we know really well…Pizza, buffalo wings, chili, and soup. Not in that order but you get what I’m trying to say. We are a cold-weather food town!
This brings me to my latest soup recipe – cheeseburger soup. When you think of soup, it’s not often you think of a cheeseburger. But, if you’re in a soupy mood but could also go for a cheeseburger, then I suggest putting this easy soup recipe on the meal plan.
Healthy And Delicious Cheeseburger Soup For Dinner
This cheeseburger soup recipe is hearty, creamy, and a meal in itself. It’s perfect to make during the weekend to enjoy all week for lunch or dinner. Or, if you’re looking for a soup to make for a football party, then this cheeseburger soup is a real crowd-pleaser.
Most cheeseburger soup recipes are made with ground beef and Velveeta cheese but we try to be healthy here at Organize Yourself Skinny. So, I decided to lighten this soup up by swapping out the ground beef for ground turkey and using freshly grated sharp cheddar cheese in place of Velveeta.
But, let me tell you this cheeseburger soup does not skimp on flavor. Trust me, you’ll never miss the processed cheese and beef!
Cooking Tips For Cheeseburger Soup
Besides making a couple of healthy swaps, here are a few tips when it comes to cooking some cheeseburger soup.
- Swap out ground beef for turkey. I prefer using ground turkey in this recipe because it cuts the fat in half without losing the flavor. However, if you prefer to use ground beef in this recipe, you certainly can. I recommend using lean 95/5 ground beef and drain the extra fat if needed.
- Leave out the canned diced tomatoes. Most cheeseburger soup recipes don’t use a can of diced tomatoes. However, I love diced tomatoes in most of my soup recipes so I tend to throw one in for extra flavor. If you prefer not to have a tomato taste to the soup, then you can leave it out without any issue.
- Grate your own cheese. Most recipes use Velveeta because it melts easily. But, it really doesn’t get more processed and unclean than Velveeta cheese so I never use it. Grating your own sharp shredded cheese will add a ton of extra flavor and also help the cheese melt more smoothly.
- Add favorite cheeseburger toppings. The toppings on this soup really make the recipe! I love adding fresh shredded lettuce, chopped tomatoes, and onions. Don’t be scared to put fresh cold ingredients on top of a hot soup because it’s delicious. Also, if you want to get real fancy, then add some chopped cooked bacon to the top and a little dill pickle. Basically, think about your favorite cheeseburger ingredients and add those over the top.
- Substitute Greek yogurt for the sour cream. If you want to lower the fat a little more, you can use Greek yogurt instead of sour cream. I prefer sour cream because it does blend better into the soup and is creamier.
- Make it thick and creamer by blending up some of the soup. If you have an immersion blender, you can blend up some of the soup and this will create a thicker creamer soup by blending up the creamy potatoes.
- Use butter potatoes. The best potatoes to use in this recipe are butter potatoes. They actually turn out to be creamy and delicious. I find other potatoes to be a little on the grainier side.
Supplies Needed To Make Healthy Cheeseburger Soup
- 5 ½ – 6 qt Le Creuset Dutch Oven – This is my favorite pot to use for soup. It is a little pricier but in my experience, it’s worth it. I use this pot for every soup recipe I make.
- Immersion blender – If you want to easily blend up some of the soup, then this tool will come in handy.
- Whisk – I love this set of whisks by Oxo and use them all the time.
- Soup ladle – Having a ladle makes it easier to serve up some of this delicious soup.
- Souper cubes – This works perfectly for freezing soup ahead of time.
- 16-ounce mason jars – You can purchase plastic or glass containers to freeze soup in. Don’t forget the lids.

Alright, let’s get to this recipe! Here is a list of ingredients you will need to make cheeseburger soup:
- Olive oil
- Onion
- Carrots
- Celery
- Ground turkey
- Worcestershire sauce
- Hamburger seasoning
- Onion powder
- Garlic powder
- Salt
- Pepper
- Chicken stock
- Canned diced tomatoes
- Butter potatoes
- Shredded cheese
- Grated parmesan cheese
- Sour cream

How To Make Stove Top Cheeseburger Soup
For this soup recipe, I will be sharing my stovetop instructions. If you would like to know how to make this cheeseburger soup in the crockpot, keep on reading.
Prep The Soup Base
Start by sautéing the chopped celery, carrots, and onions in olive oil over medium heat. You don’t need them to be cooked all the way down but cooked enough so the onions are translucent and the vegetables are fragrant. This takes about 5 – 6 minutes.
Add The Meat + Liquids
Add the ground turkey to the party along with the Worcestershire sauce and hamburger seasoning along with the onion powder, garlic powder, salt, and pepper.
Cook everything together until the ground turkey is browned and no longer pink.
Stir in the chicken stock and canned tomatoes and then bring to a boil.
Let The Soup Simmer
After the soup is boiling, add in the diced potatoes, bring to a boil, and then reduce to a simmer and let it cook for about 15-20 minutes or until the potatoes are tender. If you’re using an immersion blender to blend the soup some, then this is the step you can do that in.
Make The Soup Creamy
Remove the soup from the heat.
Take a ladle or so of soup and put it into a bowl and whisk in the sour cream until it’s thin and creamy. Then, stir the sour cream mix into the soup with the parmesan cheese and cheddar cheese.
Stir everything until it is melted, blended, and smooth.
Serve and Enjoy!
Ladle the soup into a bowl and add your favorite cheeseburger toppings to this soup. I love to add shredded lettuce and chopped tomatoes but use whatever you like!
How To Make Cheeseburger Soup In A Crock Pot
The number one question I get with this recipe is: Can I make cheeseburger soup in the crockpot?
Yes, you can, but, unfortunately, you can’t just dump all the ingredients into the crock and go. Nope, you need to do a little work first.
- Start out by browning the ground turkey with some Worcestershire sauce and hamburger seasoning.
- Then, saute the carrots, celery, and onions before putting it into the slow cooker.
- Add the chicken stock, diced tomatoes (if using), and diced potatoes to the crockpot.
- Cook on high for 4-5 hours or on low 6-8 hours. You want to cook it until the vegetables are tender.
- Ladle a cup or so of the hot liquid into a bowl and whisk in the sour cream.
- Then, stir it back into the soup along with the shredded cheddar cheese and parmesan cheese.
- Stir everything together until it’s melted.
- Serve hot and enjoy!
How To Meal Prep Cheeseburger Soup
This soup recipe tastes great days later so it’s the perfect soup to make ahead of time. You can make it on Sunday to eat during the week for lunch or dinner. Either store them in a large container or portion out the soup into smaller containers to store in the refrigerator.
You can also freeze this soup ahead of time. After the soup cools, then ladle it into these silicone Souper Cube trays and freeze. Pop out the soup blocks after it’s frozen and then put all of the blocks into a freezer bag and freeze.
You can also freeze in plastic or glass mason jar containers! I like to free in 16-ounce containers for a portioned out lunch or dinner.
What To Serve With Healthy Cheeseburger Soup
Honestly, this soup is so hearty and is a meal on its own. My only suggestion would be a nice slice of bread or make some garlic toast croutons to put on top.

- 1 tablespoon olive oil
- 1 cup onion
- 1 cup carrots

- 32-ounces of chicken stock (4-cups)
- 1 (15 ounce) can of diced tomatoes (optional)
- 1.5 lbs butter potatoes, quartered or diced
- 2.5 cups shredded sharp cheddar cheese
- ½ cup grated parmesan cheese
- 1 cup sour cream
Instructions
- In a 5½ quart dutch oven, or soup pot, heat olive oil over medium-high heat.
- Add the onions, carrots, and celery. Cook for about 3-5 minutes until fragrant and onions are translucent. The carrots and celery don’t need to get soft during this step.
- Add the ground turkey, Worcestershire sauce, hamburger seasoning, onion powder, and garlic powder. Mix all the ingredients together and cook until the ground turkey is browned and cooked through.
- Pour in the chicken stock and diced tomatoes (if using) and bring to a boil.
- Reduce to a simmer and then add in potatoes and cook for about 15 – 20 minutes, or until the potatoes and vegetables are soft.
- Remove the soup pot from the heat.
- Take a ladle or so of soup and put it into a bowl and whisk in the sour cream until it’s thin and creamy. Then, stir the sour cream mix into the soup with the parmesan cheese and sharp cheddar cheese.
- Stir everything until it is melted, blended, and smooth. If needed, put back on the heat over low until hot and completely heated through.
- Ladle into bowls and serve hot with your favorite cheeseburger toppings.
