What Makes This Chicken Broccoli Casserole So Good

When I think of comfort food, one of the first things that comes to mind is a delicious, hot casserole. And if you’re looking for a delicious, hot casserole, this Chicken Broccoli Casserole will certainly not disappoint.

What Is In This Broccoli And Chicken Casserole?

It’s loaded with these delicious low carb ingredients:

  • Savory rotisserie chicken
  • Creamy hot cheese
  • Tender crisp broccoli
  • Parmesan cheese
  • Crisp Almonds

It’s so good, you’ll want to make this for dinner at least once a week!

One of my favorite things about this dish is how quick and easy it is to make. This recipe uses meat from a cooked rotisserie chicken, which makes the recipe super quick to make.

I like to use rotisserie chicken in place of uncooked chicken in some of my recipes in order to save myself the time and effort of cooking the chicken myself. This means less time cooking and more time eating, which is a huge win in my book.

No cream of anything soup in this keto chicken casserole. No potato chips on top, unlike in your typical chicken divan casserole.

Just good, wholesome, all-natural and clean food.

How Do You Make Chicken Casserole From Scratch?

1. Preheat oven to 400F.

2. In a large bowl, mix together broccoli, chicken, cream, cheddar cheese, chicken bouillon, and pepper.

3. Tip the mixture into a 9-inch baking pan or pie pan.

4. Top with sliced almonds and shredded parmesan cheese.

5. Bake at 400F for 15-20 minutes. Enjoy!

Tips And Tricks For Making Keto Chicken Broccoli Casserole

  • This is a pretty straightforward mix and bake recipe so I don’t have a lot of tips. But this can as easily be made in a microwave as in the oven.
  • Since it uses cooked chicken and frozen broccoli, it’s a great recipe to make for one person or four people at a time.
  • If you want to use fresh broccoli for this, cut it into small florets, and lightly steam it for a little bit before adding to the casserole. 
  • You could also use cauliflower in this recipe.
