Try these quick and easy Middle Eastern-inspired falafels with tomato salad and tzatziki.
500g cocktail truss tomatoes
1/2 small red onion, thinly sliced
1 cup fresh flat-leaf parsley leaves
2 tablespoons extra virgin olive oil
225g packet falafel balls
200g tub tzatziki dip
4 small wholemeal pita breads
Step 1 Cut half the tomatoes in half and the remaining into quarters. Place in a bowl. Add onion, parsley and oil. Season with salt and pepper. Toss to combine.
Step 2 Serve tomato salad with falafel, tzatziki and pita bread.
