Keto Edamame: A Crave-Busting Garlic & Parmesan Snack

On keto, I rarely crave any type of bread anymore, but I do crave dipping oils. And there’s not much to dip in oil without bread. That’s where a keto edamame fix has been my best friend lately because the major advantage of edamame is that you can dress it up in any delicious flavor you want and….suck it off the pod. Great!

So I came up with this little combo that has been helping me kick those cravings. Edamame isn’t at the top of the low-carb veggie list, but it’s certainly not a potato. I don’t eat edamame every day, and it’s certainly never kicked me out of ketosis, so if you choose to make this recipe, I think you’ll really enjoy it!

And yes, I’m adult who uses dinosaur chopsticks.

Garlic & Parmesan Keto Edamame

Servings: 2

Serving Size: 1 1/2 cup

Prep Time: 3 minutes | Cook Time: 4 minutes | Total Time: 7 minutes

Nutritional Facts: 2g Net Carbs| 218 Calories | 20g Fat | 6g Carbs | 8g Protein | 4g Fiber

Ingredients:

  • 1 10oz frozen bag edamame in the pod (preferably the steamer type)
  • 1/4 tsp crushed red pepper flakes
  • 1/8 tsp garlic powder
  • 1/8 cup FRESH grated parmesan (but the green can will do in a pinch)
  • 1 tbsp olive oil
  • Flaked sea salt and fresh pepper to taste

Instructions:

  1. Cook edamame as directed by the package (usually steamed in the microwave).
  2. Drain and add to a medium-sized mixing bowl. Toss with olive oil, then red pepper flakes and garlic powder.
  3. Add grated parmesan, toss, taste, then season with salt an pepper to your liking, and enjoy!
