Keto Spinach Rice Pilaf
A couple of weeks ago I shared my roundup of 30 Keto Side Dishes that are amazing have on hand to keep your meals fun, filling, and flavorful. This week, I’ve got a new one to add to the mix!
My Keto Spinach Rice Pilaf is my new favorite! It packs in the veggies and nutrients and is so simple. Bonus? It’s ready in under 5 minutes!
This super easy, delicious recipe will definitely make its way to the top of your side dish rotation!

- Heat a large nonstick skillet over medium heat.
- Add in the ghee and package of hearts of palm rice. Cook for 1 minute.
- Add in the chopped spinach, and cook, stirring frequently, for 1-2 minutes until the spinach is just getting tender. Season with kosher salt.
- Serve warm.

Notes
Cooking Fat: I love the flavor of ghee in this recipe, but you could also use olive oil, avocado oil or coconut oil. If you’re ok with dairy, grass fed butter would be great too.
Hearts of Palm Rice: The combo of hearts of palm rice and spinach is amazing! You could also use cauliflower rice. I prefer frozen since it is the most convenient, cheapest and most neutral flavor. Easiest would be to thaw the rice, squeeze out all the water using a dish rag, then follow the recipe as written.
Spinach: I love organic baby spinach, but you could also use kale, or finely chopped chard.
