Lavender and Honey Baked Pears
You may have seen recently I’ve been food prepping on the weekend and one of my winter go tos has been some baked fruit ready to just heat again for brekky during the week. It feels like a big hug in the morning having warm cooked fruit!
I love baked pears and this time I’ve done them with a small twist with some lavender honey – yummmmm. Delicious served with greek or coconut yoghurt as a breakfast or healthy dessert option with vanilla ice cream for your after dinner treat.
Of course if you don’t have lavender you can go without too – enjoy !
LAVENDER HONEY BAKED PEARS
Serves 4
Gluten free : Dairy Free (Opt) : Vegetarian
2 large pears, cut in half
2 teaspoons butter
1 cup greek or coconut yoghurt
1/2 teaspoon cinnamon
Lavender honey:
1/4 cup pure honey
1 teaspoon food grade lavender
Heat oven to 180C and line a large baking tray with greaseproof paper. Pop butter on the tray and then place pears cut side down on tray and on top of the butter so it melts as it cooks. Bake for 30 minutes. Whilst pears are cooking make the lavender honey. Place honey in a small saucepan on very low heat, add lavender flowers and cook for 15 minutes. Remove from heat. Once pears are cooked drizzle lavender honey over the top and serve with greek yoghurt sprinkled with cinnamon. Store remaining honey in an air tight container and use as you wish.
