Need help gaining weight when I’m gluten and dairy free

24f, 5’8 weigh about 125lbs but I lose weight so easily. I feel like eating is such a chore and I would honestly be comfortable eating 1 meal a day but I know that’s not healthy. I want to get up to 135lbs bc I like my body better when I am that weight. It took me a really long time to get there but I lost all of my progress over the course of a couple of months when I started eating less mostly to save money. I need ideas and tips please and thank you, I try to eat as healthy as possible and low sugar so that also is a challenge when deciding what to eat
