Can I Make a Big Batch or a Single Serving?
This low carb hot chocolate mix is super easy to customize. I like to make a batch of low carb hot chocolate mix to serve 4 and keep in a sealed jar in the cupboard so I always have some on hand.
You just need to multiply up or reduce down the single-serve version to meet your serving needs. Instructions for 4 servings is below and a single-serve version is within the printable recipe plugin below.
HOW TO MAKE LARGE BATCH HOT CHOCOLATE MIX
Dry Ingredients
To make a big batch of hot chocolate mix with 4 servings:
2 ounces sugar-free chocolate or dark chocolate (at least 85%), grated (course or ultra-course)
½ cup collagen powder (marine or grass-fed bovine)
3 tablespoons raw cacao
Optional: 2 teaspoons low carb sweetener – or to taste (Use my Sweetener Guide & Conversion Chart)
Mix grated chocolate with collagen powder, raw cacao and optional sweetener in a bowl. Transfer to glass jar and seal. Option to decorate the jar with twine, foliage and a gift label.
Can store in an airtight glass for 2 months.

Entire batch of mix to serve 4:
5 cups unsweetened almond milk (option to substitute ½ cup with ½ cup of heavy cream, if you prefer)
2 teaspoons vanilla extract
Optional: 2 tablespoons nut butter of choice
How to Make Hot Chocolate Big Batch
In a large pan (deep enough to use a hand blender) bring almond milk and vanilla extract to just under boiling on a medium/ low heat. Turn off the heat and add Keto Hot Chocolate Mix and optional nut butter, if using.
Stir with a spatula to combine. Then blitz with a hand blender until smooth and frothy. This is essential to get the creaminess without cream and also to get rid of any lumps. Option to use a blender like a Vitamix if you prefer. Adjust the sweetness to taste and level of raw cacao.
Why Add Collagen?
Collagen is incredible for giving you strong hair, nails and good skin. It’s also great to add more protein into your keto diet… and it’s the key to making your hot chocolate frothy and thick without the need for dairy.
The dairy-free milk you choose will alter the consistency of your Keto Hot Chocolate as some brands froth more than others, but I’ve found almond milk froths and thickens best. Other nut milks don’t thicken, but still taste nice.
More Hot Chocolate Flavors
Note: these are single serve quantities. Multiply up for larger batches.
Spiced Cinnamon (1 serving)
Follow the method for the basic recipe but add 1 teaspoon of cinnamon to the hot chocolate mix with an optional pinch chili powder.
Boozy (1 serving)
Follow the method for the basic recipe but stir in 1 ounce of chosen liquor like keto baileys, brandy, rum or amaretto with the hot chocolate powder before blending.
Orange and Cardamom (1 serving)
In a large pan (deep enough to use a hand blender) bring 10 ounces almond milk and a large peeling of orange zest (approximately ½ orange) + 2 cracked cardamom pods to just under boiling on a medium/ low heat. Remove from the heat and infuse 5 minutes.
Remove cardamom pods and zest. Warm the almond milk up again and then turn off the heat and add Keto Hot Chocolate Mix. Stir to combine then blitz with a hand blender until smooth and frothy.
