Tomato Cucumber Basil Salad

Celebrate summer with this easy, plant-powered, healthy Tomato Cucumber Basil Salad, featuring only 5-ingredients (not including pantry staples).   • 2 small cucumbers (i.e., Persian), sliced
  • 5 medium tomatoes, chopped
  • ½ red onion, sliced
  • ¼ cup fresh basil, sliced
  • ½ lemon, juiced
  • 1 tablespoons extra virgin olive oil
  • Optional: Salt and pepper to taste

  1. Combine cucumbers, tomatoes, onion, and basil in a medium bowl.
  2. Drizzle with lemon juice and olive oil. If desired, season with salt and pepper.
  3. Toss well and serve.
