I haven’t posted in quite some time, but that doesn’t mean that I haven’t been active in creating and sharing new content! I have new YouTube videos up, lots of new stuff on Instagram – and have been doing weekly Instagram live recipe videos which are a lot of fun! This week I shared my epic vegan veggie nachos, last week it was Easter raw vegan Nanaimo bars, and before that it was 6 different cookie recipes all from ONE dough. Next week I’ll be sharing a healthy pasta recipe.

For the cheesecake lovers, I have a new recipe for raw vegan Lemon Berry Cheesecakes which you can find on the Reducetarian blog. I made them for Easter and they were a hit! So luscious, creamy, and refreshing.
I think you’ll love my EASY vegan chocolate ice cream recipe too!
I’ve made this ice cream a handful of times and it never stays around for long 😉 ALSO, it stays scoopable in the freezer!
Vegan Chocolate Ice Cream
1 can full fat coconut milk
1/3 cup maple syrup
1/4 cup cacao powder
1 teaspoon vanilla extract
1/8 teaspoon salt
1/4 cup dark chocolate chips/chunks
Blend all BUT the chocolate chips in a blender until smooth. Add the chocolate chips to a heat proof bowl set over a pot of hot water on the stove. Pour the liquid over top and allow the mixture to heat up, melting the chocolate. Whisk every few minutes. Do not boil, just heat to melt the chocolate. Pour the liquid into a large bowl and place in the fridge until well chilled, at least 8 hours. Process through an ice cream maker (it’ll be like soft serve at this point) and then transfer it into a container and place into the freezer for at least 4 hours to firm up a bit more.
I drizzled chocolate sauce, freeze dried raspberries, and sliced almonds on top. It was absolutely delicious!
