Having planted a backyard garden full of the best keto vegetables, my brain is swimming with some delicious low-carb recipes where I can use all of my garden veggies.

My zucchini patch has been growing tremendously so I’ve been using them to make zucchini fritters and some chocolate zucchini cookies for a healthy keto dessert. I also love to use zucchini as a base for different recipes- like these mini pizza bites!

These zucchini pizza bites really do taste like pizza- just without all of the carbs!

Ingredients Needed For Zucchini Pizza Bites

You don’t need many ingredients to make these fun pizza bites. In fact, you probably already have everything you need.

Here’s the list:

Zucchini

Use as much sliced zucchini as you need. For my recipe, I just used one but this recipe could easily be doubled.

Also, be careful with how thick you slice them. For them to cook at the same rate, the slices need to be the same.

Pepperoni

I used one slice of pepperoni per zucchini slice. This came out to about 200 grams of pepperoni slices.

You can use salami or even ham instead of pepperoni as well. Use your favorite meat and make it taste how you want.

Pizza Sauce

There are two options. You can either buy sugar-free pizza sauce or make your own. I prefer to make my own pizza sauce because I like to control all the ingredients. This is my sugar-free pizza sauce recipe, and it’s pretty tasty!

You can also use fresh tomato slices instead of sauce.

We typically have tomatoes growing along with zucchini in the garden. So, using a small tomato slice on these zucchini pizza bites is perfect!

Cheese

I grated my own mozzarella and cheddar cheese. I bet some sliced cheese just laid on top would work just as well (and won’t require any grating).

Cheese is one way you can change the taste without any effort. Use spicy cheese or mild – the choice is up to you.

Spices

Since these are pizza bites, I used Italian spices – sage, basil, salt, and pepper. Other spices that will taste delicious on top are fresh parsley and oregano!

Toppings

You can dress up these tasty little pizza bites however you like. Pick your favorite pizza toppings, just make sure they will fit on the small veggie slices.

Quick Tips:

  • Peel the zucchini first. My daughter does not like zucchini skin, but she eats these up when I peel the skin first. And, they look more like regular mini pizzas without the green.

How To Make Zucchini Pizza Bites

All of the steps to make these pizza bites are in the printable recipe card at the bottom of this post. First, here are some photos of each step, along with some additional tips.

Slice the Zucchini

First, slice the zucchini into round pieces. Make sure they are all the same width. I found that using a mandolin slicer keeps them consistent and saves me a lot of time.

Sprinkle With Spices

Then, place them on your prepared baking sheet and sprinkle with the spices. Use all your favorite spices at this step – this is where you can be creative.

When it is spiced how you want it, place it in the oven for about 5 minutes.

Add Pizza Sauce

Next, add just a small amount of pizza sauce on top of the zucchini. Then, bake it again for another 5-8 minutes.

Top With Meat, Cheese, And Toppings

Finally, add the rest of your favorite toppings. This is where you can add your favorite type of meat and pizza toppings!

Bake

Let it bake for a final 5 minutes. Pull them out and let them cool down for about 2 minutes.

That’s it! Now they are ready for you to enjoy.

What To Serve With Pizza Bites

What you serve with the pizza bites depends on when you are eating them. If you want to eat them with your lunch, serve them with a heaping bowl of baby kale salad with avocados and parmesan. They make a great combo!

If you are serving them as party food or a snack, enjoy them with gluten-free green bean fries and a batch of baked hot wings.

Is pizza sauce keto-friendly?

Typical pizza sauce is not keto-friendly as it usually has added sugars. That’s why I suggest either buying sugar-free pizza sauce or making your own.

How do you store leftover pizza bites?

I recommend eating these pizza bites right out of the oven. Leftovers do not save very well because the texture changes. Cooked zucchini becomes soggy.

Store leftover pizza bites in an airtight container in the refrigerator for up to 3 days.

Is pepperoni keto-friendly?

Yes, pepperoni is low in carb and high in fat, so it is a keto-friendly meat.

These mini pizzas also make great appetizers for your summer parties. You can prepare a bunch the day before and heat them up before serving.

Instructions

  • Preheat oven to 350°.

  • Properly wash zucchini. Leave skin on or alternately peel skin from top to end. Slice zucchini, about ¼ inch per round.

  • Season zucchini slices with ground black pepper, sage and basil. Pop in the oven for 4 to 5 minutes.

  • Add ½ teaspoon of pizza sauce on top of each zucchini. Top with pepperoni with each round. Bake for 5 to 8 minutes or until pepperoni’s sides are slightly browned.

  • Take it out of the oven and add cheese. One side with mozzarella and the other side with cheddar. Top with one slice of black olives on the mozzarella cheese side. Bake for 5 minutes or until cheese melts.

  • Once in a while, check if pepperoni is sliding to the side and just slowly push back to the center using a fork or tongs.

  • Let it cool for 1 to 2 minutes and slowly transfer to a platter.

  • Add minced cilantro for garnishing.

Notes

Recipe makes about 25 slices at 5 slices per serving.
If your kids don’t like vegetable skins, peel the zucchini first. Plus, they will look more like regular mini pizzas without the green.
